The Quickest Lentil Soup Ever

Every time I make the lentil soup for the Ashram and I am asked for the recipe.
So here it is..

Ingredients:

      • 300g Red Split Lentils
      • 1 tin Chopped Tomatoes with herbs
      • 2 tsp dried Coriander
      • 1 tsp Vegetable Stock Powder
      • 1 tsp Turmeric
      • 2 Bay Leaves
      • ¼ tsp sugar
      • Salt and Black Pepper to taste

Method:

Put all ingredients in a pan with 1 litre of water.
Bring to boil and simmer for 10 to 15 minutes until lentils are soft.
Serve as is, or for a smoother soup, use a blender.
Good with crusty bread, grated cheese and good company.
