The Quickest Lentil Soup Ever
Every time I make the lentil soup for the Ashram and I am asked for the recipe.
So here it is..

Ingredients:
- 300g Red Split Lentils
- 1 tin Chopped Tomatoes with herbs
- 2 tsp dried Coriander
- 1 tsp Vegetable Stock Powder
- 1 tsp Turmeric
- 2 Bay Leaves
- ¼ tsp sugar
- Salt and Black Pepper to taste
Method:
Put all ingredients in a pan with 1 litre of water.
Bring to boil and simmer for 10 to 15 minutes until lentils are soft.
Serve as is, or for a smoother soup, use a blender.
Good with crusty bread, grated cheese and good company.
